Below are the details and description for the Healthy Meal Challenge assignment put together by my team for ETEC 647e.

Description
Makeover a current recipe to create a healthier meal at home. This activity can be used by members of ETEC 647e course, and those who are food enthusiast. This assignment requires participants to creatively update a popular dish to make it healthier. In addition, participants are to use technology to create a how-to guide for the making the meal.
Target audience
Members of ETEC 647e class or foodie enthusiast.
Performance objective(s)
1. Be able to include healthy alternatives to prepare a meal.
2. Be able to properly document, display, and instruct how to create a healthy meal.

If a member of your team does not have access to a kitchen or does not want to prepare/cook the food, you have the option of using Internet sources for pictures and steps. In light of our discussion in Weeks 1 and 6, please be sure to use only photos that you have permission to use, such as GNU free licensed, public domain, or Creative Commons licensed.
Additionally, the recipe for the dish need not be complicated. A mixed green salad composed of bagged mixed greens from the supermarket with a bottle of light dressing will be appropriate. It should be easy to take pictures of these with a mobile phone or a camera then upload it to SnapGuide. We do want to encourage creativity though.

Procedure
- Locate your team of 3.
- Choose a theme for your team’s meal, eg. Italian.
- Choose 3 separate plates, within your theme, to create whole meal. e.g. Appetizer: Stuffed mushrooms; Entree: Sauteed Shrimp Pasta; and a salad or dessert: Honey Mustard Fried Chicken Salad.
- Either develop or find a “healthier” recipe for each plate. e.g. Appetizer: Salerno stuffed mushrooms; Entree: Gorgeous Garlic Shrimp; and a salad or dessert: Shaved Fennel Salad.
- *You are not able to use the example menu items for your team’s
- Write a description of the meal and define what a healthy meal should compose of. Then describe how you would modify a recipe to make it “healthier” by your definition. Include what items you have decided to modify or change out.
- Have each member create at least one plate on their own while taking pictures to document the steps. The whole meal will be created by your team combined using various online tools such as Google Docs to communicate, collaborate.
- Ideas for menu items, and development of your instructions. Log in to SnapGuide. If you do not have an account, please register for one (It’s free!!!). You can also log in using either your Facebook or Twitter account. There is also an iOS app for use with iPhone/iPad.
- As a team, create an instruction on how to create the entire “healthier” meal utilizing images (including those taken) and include descriptions of each step using text in your SnapGuide.
- Be sure to include your definition of “healthier”.
- Explain how you came up with your definition of “healthier".
- Address what ingredients were changed, why and how it is healthier based on previous questions.
- Post a link of your completed SnapGuide for peer review and evaluation.
- Share the guide created on FB, Twitter, 647e reflection blog or other social media sites such as Instagram. Use #healthymeal and #sp647e to tag your blog posts and tweets.

Sharing your group report
- Embed or link your SnapGuide on a new web page with a title and description of your team's meal.
- To create a new page, click on (New Page) found on the top right hand corner of this site.
- For you page title, enter "Healthy Meal Challenge Team Name" (for example: Team Kiwi).
- Make sure the page is located under Team A and Healthy Meal Challenge. This could be done in the Create a page in Site: ETEC 647e page shown below:
- Your team page will not immediately go in the Navigation Menu. Email or Tweet to Frank to let him know that your team page is ready to be posted in the Navigation Menu.
